JAPANESE CRAB CREAM KOROKKE
A vegan version of Japanese-style 'crab' cream croquettes! Incredibly crispy on the outside with a hot, melty, creamy bechamel inside studded with corn and vegan crab. Use shredded king oyster mushroom stems or even shredded tofu in lieu of vegan crab if you don't have access to it. These can be frozen and make an excellent snack for entertaining! Reheat in the airfryer.

I make this with roasted hazelnuts instead of cashews and I use real parmesan instead of that yeast. It is really good over roasted chicken that was rubbed with chilli powder and cumin

This is really helpful, I've been to the first restaurant myself in 2022 and it was so good! Generally it's a lot easier to find vegan options in the more touristy/ "westernized" areas of Seoul, especially Insadong and Itaewon. (I say westernized because many tourists and foreigners are staying there so those are the areas where you'll find more international cuisine and stuff that caters to foreign taste a bit more.)
